Mladina ještě není finální produkt. Nejdříve je potřeba ji zchladit na teplotu 10 °C a přečerpat do otevřených kvasných kádí. Do těch se přidají čisté pivovarské kvasnice, které si Velkopopovický Kozel sám vyšlechtil. Kvasinky poctivě udržujeme a laboratorně sledujeme. Tento kmen je jedinečný a je charakteristickým prvkem stálé kvality našeho piva. Hlavní kvašení probíhá v oddělení, které nazýváme spilka. Pivovarské kvasnice tu pracují a kvašením přeměňují cukry na alkohol a oxid uhličitý. To trvá 7 dní, načež se kvasnice usadí ke dnu a po vyprání čistou vodou je možné je použít na další várku.

★ ★ ★ ★ ★ The Restaurant itself and atmosphere are quite nice, but unfortunately i cant say anything good about the food experience I had there. The food was not well cooked, dry and cold. The waitresses didnt even ask if we were happy with the food and just took away the plate. No asking if we'd like anything else. Which we didn't then. Maybe we just caught a bad day.

★ ★ ★ ★ ★ Pork steak was incredibly greasy and gross even by pork standards. Some of the French fries it came with were slightly warm at best. Soup was absolutely tasteless. Service is neither welcoming nor rude. The beer was good. Food definitely not worth the money.

39 for a kozel whats not to like. Very nice decorations and a very clean pub

Update, reduced my star reviews to 3. the survice is not so helpful during lunch on the weekend. I am used to this kind of behavior but it is still very bad for the owner of the restaurant to have 2 people chatting with maybe some refulars but to fail to take my order. Please keep that in mind if you want to get something to eat and are ignored for 10 minutes.
