Dnešní obec je nástupcem původní farní vsi Krušina, která obklopovala úpatí hradního kopce a dodnes se z něj dochovala jen uprostřed hřbitova stojící zvonice původního, později rovněž zaniklého kostela. Ves je prvně jmenovaná roku 1352 a od roku 1405 byla označována už jako městečko. Před polovinou 15. století mizí z pramenů jméno Krušina a okolo roku 1480 má již obec jednoznačně stejné jméno jako hrad - Jestřebí. Od počátku je centrem řemesel a obchodu. Již v roce 1407 se zde uvádí mlýn, v 16. století tu fungoval pivovar. Existence obce je od počátků spojována s významným šlechtickým rodem pánů z Dubé. V listině datované kolem roku 1300 je poprvé výslovně uváděn hrad Jestřebí. Jeho zbytky dnes tvoří turisticky nejlákavější místní objekt. Obec je sice z jihozápadní strany protnuta frekventovanou silnicí, přesto je tu klid, hlavně v oblasti podhradí a směrem k Provodínu. Before the middle of the 15th century the name Krušina disappeared from the sources and around 1480 the village has the same name as the castle - Jestřebí. From the beginning it has been a center of crafts and trade. Already in 1407 there is a mill, in the 16th century there was a brewery. The existence of the village has been associated with an important noble family of the Lords of Dubá. In a document dated around 1300, Jestřebí Castle was explicitly mentioned for the first time. Today, its remains form the most attractive tourist destination of the village. Although Jestřebí is intersected from the southwest side by a busy road, there is still peace here, especially in the area below the castle and towards neighboring Provodín.
